1. Taco Dip
Transform any party into a fiesta you'll never forget by serving up this hot and tasty Mexican-inspired dish. Serve with plenty of tortilla chips and fresh veggies for dipping.
- 1 pound ground beef or turkey
- 2 1/2 ounces taco seasoning
- 8 ounces shredded cheese
- 8 ounces cream cheese
- 16 ounces sour cream
- 8 ounces refried beans
- 8 ounces salsa
- 8 ounces shredded lettuce
- Chopped tomatoes and jalapeno peppers to taste
To begin, warm a skillet over medium heat. Add your ground meat of choice, and increase the cooking temperature to medium-high. Cook the meat for about seven minutes, adding half of your taco seasoning halfway through. Be sure to thoroughly combine the seasoning with the meat for maximum taco taste.
After you've drained your meat and set it aside to cool, combine the remaining taco seasoning with your sour cream and cream cheese. Spread a layer of this mixture onto the bottom of a glass baking dish, then add layers of meat, beans and salsa. Top with an additional layer of the sour cream mix, and then cover the dish with the shredded cheese. Place the dip in the refrigerator until party time, and then heat it at 350 degrees until the top layer of cheese is melted and bubbling. Remove it from the oven; top with fresh tomatoes, lettuce and peppers; serve and enjoy.
If you host a vegetarian crowd, simply substitute more salsa, beans and cheese for the meat layers.
2. Shrimp Kebobs

- 2 pounds large peeled and de-veined shrimp
- 1/2 cup olive oil
- 2 tablespoons lemon juice
- 1/2 cup soy sauce
- Fresh lemon wedges
- Salt and pepper
Start this recipe the night before your gathering by first preparing the marinade. In a bowl, mix together the soy sauce, olive oil and lemon juice. Add salt and pepper to taste. Submerge the shrimp in the marinade, cover and place in your refrigerator overnight. Right before guest start to arrive, use skewers to create kebobs containing two to three shrimp. Cook the shrimp to your liking on the grill and serve with fresh lemon wedges.
3. Bacon-Wrapped Asparagus
Bacon lovers, rejoice! This tasty recipe is the perfect way to get your fix while also consuming some healthy vegetables.
- 10 strips bacon
- 1 pound fresh asparagus spears.
To begin, preheat your oven to 400 degrees. Wash the asparagus, and then trim away the bottom portion of the stalks. Cut each of your 10 bacon strips into 1-inch pieces. Wrap the bacon around your asparagus, using one piece per spear. If your bacon-to-vegetable ratio is off, you can use larger chunks of bacon to hold multiple spears. Place all your bacon-wrapped veggies onto a cookie sheet, and place them in the oven for about 25 minutes. Allow these snacks to cool just a bit before serving them to guests.
