Celebrate National Shrimp Scampi Day with These Shrimp Dishes

What pairs better with a delicious frozen tropical cocktail than a hot shrimp dish?

April 29 is National Shrimp Scampi Day, so invite some fellow Parrotheads over and celebrate with a strong frozen margarita and one of these shrimp meals. 

Shrimp Scampi
This classic pasta dish is a great coastal option for a backyard barbecue or a more elegant dinner party. Try making it for your guests by cooking a big batch. 

Cook large, de‚Äč-veined shrimp on a medium heat skillet with salt, pepper, garlic and oil. Once the shrimp is cooked, remove it and mix white wine, butter and other herbs until it's thickened and reduced. At the same time, prepare pasta of your choosing. Once the pasta is ready, add the shrimp and pour the skillet sauce on top. Mix it thoroughly to spread the flavor throughout. The spices you use in the sauce determine how spicy or sweet it is.

Jerk Shrimp Fajitas 
Use jerk flavor in a Southwestern recipe for a truly unique, tropical fusion dish straight from the Caribbean. This recipe is simple - here's what you'll need: 

  • Margaritaville® Jammin' Jerk Shrimp
  • Red and yellow bell peppers
  • Onion
  • Shredded cheese
  • Tortillas 
  • Salsa, sour cream and other toppings. 

Cook your jerk shrimp with the peppers and onion in a skillet until the food is hot and grilled. To make each fajita, scoop out a bit of the skillet mix into a tortilla, then add cheese, salsa, sour cream or any other Southwestern toppings you can think of. Make sure you have plenty ready - guests will want seconds of this tasty treat.

If you don't feel like making fajitas, try you hand at shrimp kebobs instead. This gives you a chance to make a creative shrimp dish that is easy and could be cooked on the grill. Simply skewer your shrimp along with onions, peppers, mushrooms, pineapple, mango and any other vegetables or tropical fruits you want. Pick a festive marinade and start grilling. 

A margarita to wash it all down with 
While you're cooking, roasting or grilling your shrimp, make sure you spend a little time with your frozen concoction maker as well. Blend up a classic lime margarita or go for a mango frozen drink for a truly tropical experience.
